Ingredients (makes 12 servings - 2 ounces per serving)
- 1 teaspoon lemongrass – chopped fine
- 1 teaspoon ginger root – grated
- Zest of half a lemon
- Juice of ½ a lemon
- Zest of ½ a lime
- Juice of 1 lime
- ½ teaspoon orange zest
- ½ tablespoon extra-virgin olive oil
- 1 whole green bell pepper – seeded and small diced
- ½ mango – seeded, skinned, and small diced
- 1 cup of small diced seedless cucumber
- 1 cup diced semi ripe pineapple – skinned and small diced
- ½ small red onion – minced
- ¼ teaspoon kosher salt
- 1/8 teaspoon cayenne pepper
- 2 tablespoons agave nectar
- ¼ teaspoon coarse ground black pepper
- 4 mint leaves – rinsed and chopped
- 6 cilantro stems with leaves – rinsed and chopped
Directions
- In a mixing bowl add all ingredients except for the avocado. Mix ingredients well with a spoon or plastic kitchen spatula. Once all the ingredients have been mixed well, add the medium diced avocado and fold into the mixture.
- Let sit in the refrigerator for at least 15 minutes and serve over protein of choice.
