Spring wheat berry salad 

Ingredients to cook wheat berries

Yield: 4 cups cooked

  • 2 cups ginger tea (2 tea bags)
  • 3 cups red zinger tea (3 tea bags)
  • 2 cups raw wheat berries

Directions

Brew the teas and discard the tea bags. Bring the tea to a boil and add the wheat berries. Cook until just tender, yet still have texture (about 20 – 25 minutes). Strain and chill in the refrigerator.

Ingredients to prepare salad

  • 2 cups baby spinach
  • 3/4 cup toasted pecans
  • 1 cup strawberries, halved or quartered
  • 1 cup blueberries
  • 1/2 cup loosely packed basil chiffonade
  • 1 cup baby arugula
  • 4 cups cooked wheat berry
  • 1/2 cup feta cheese, crumbled (optional)

To Assemble Salad

Once the wheat berries are no longer hot, toss all of the ingredients in a salad bowl with the desired amount of dressing.
